Wine- Mixed Fruit Wine

Ingredient
Fruits-(Mango, seedless grapes, Orange,Bananna, Apple) 1/4 kg each
Sugar- 1 kg
Yeast-1 tspn
Boiled Water- 3 litre
Lime juice-1 tspn
Cloves and Cinamon-1 each
Method
Mash all the fruits. In luke warm water add sugar and make it to melt then add lime juice, fruits in it and close the bowel for 24 hour, then put yeast in it and slowly stir and tranfer the mix into another jar then add cloves and cinamon in it and cover with a air tight lid for 21 days, after 21 days drain the mix and keep in a bottle.

Toor Dal Rasam

Ingredients
Toor Dal-1/2 cup (Boil nicely and take its water-2 cup)
Garlic-mashed-1 spoon
Small onion -mashed - 2tbspn
Cumin seed or (jeera), fenugeek and mustard seed- 1 tspn
Dried Chilly-2
Malli leaves cut into small peices-1/2 cup
Curry leaves-10 petals
Salt - as required
Oil-as required
Rasam powder-11/2 tspn
Method
Pour oil in a pan, put cumin seed, mustard seed, fenugeek, dreid chilly, curry leaves, garlic, onion, tomato and fry nicely then add rasam powder, salt again mix nicely add toor dal water in it and boil for few minutes, last add malli leaves in it and close with a lid and boil for 1 minutes. Remove from the fire and serve hot with rice.

Curd-Chicken

Ingredients
Chicken-1 kg (skin removed)
Onion-2 (make it paste)
Green Chilly-3 (make paste)
Tomato-2 (cut into small pieces)
Garlic and Ginger paste- 2 tbspn
Malli leaves-2 tbspn
Mint leaves-2 tbspn
Punjabi Garam Masala-2 tbspn
Turmeric-1tspn
Vegetable Oil-3 tbspn
Fat removed Curd-1 cup
Milk- 1 cup
Salt-as required
Method
Pour oil in pan when it is heated put onion paste, green chilly paste, ginger and garlic paste and fry nicely then add punjabi garam masala, turmeric powder mix nicely then add chicken in it. Make fire in sim, close the vessel with the lid and boil for 5 minutes then add mint leaves, malli leaves,tomato and salt mix nicely and close the vessel with a lid and boil. When chicken is half boiled add milk in it and mix nicely, then boil till the chicken is cooked. Remove from the fire and serve hot with chappathi or nan.

Snacks- Pakuvada

Ingredients
Gramflour-500 grms
Rice powder-100 grms
Salt- as required
Ginger-2 pieces (cut into small pieces)
Green chilly- 5 (cut into small pieces)
Curry leaves-as required
Malli leaves-as required
Pudina leaves- as required
Oil- 250 grms
Method
Mix rice powder, gram flour, salt and water into thick battar add all other ingredients in it and keep for 5 minutes. Pour oil in a pan when it is heated put this mix with a small spoon and fry nicely till it is golden brown.

Snack- Rava Puri

Ingredients
Rava- 2 cups
Coconut-1 cup
Fennel seeds-1/2 tspn
Oil - as required
Salt - as required
Method
Grind coconut with 1 cup of water, fennel seed and salt, add rava in it and mix like chapathi battar, then roll like round puri shape and fry.

Side- Dish -Mutton Fry

Ingredients
Mutton-1/2 kg (cut into big pieces)
Chilly Powder-3 tbspn
Turmeric Powder-1/2 tspn
Coriander Powder-1/2 tspn
Garam Masala -1/2 tspn
Salt- as required
Water -1 cup
Tomato-3 (big)
Coconut Oil-1/2 cup
Curry leaves- 20 petals

Method
Clean the Mutton add turmeric powder, chilly powder, garam masala, coriander powder, salt, and water mix nicely and put in the pressure cooker.when the mutton is boiled put tomato in it and boil nicely till the water is dried, pour oil in a pan when it is heated put curry leaves and mutton in it and fry nicely, remove from the pan and serve hot with chappathi, rice or nan.

Snack-Paneer Fish Finger

Ingredient
Paneer-1 cup (mashed)
Fish-1 cup (boil with pepper and salt then shreded)
Cornflour- 1tbspn
Egg white-1
Pepper-1tbspn
Salt-ae required

Method
Mix paneer and fish nicely with little pepper, then spread little oil in a plate put this mix in it and steam for 15 minutes, mix cornflour and egg white in a bowel, in other bowel take little bread crumbs, mix this paneer and fish nicely and make a shape as you wish, then dip in the egg white and roll in the bread crumbs and fry till it is golden brown, remove from the fire and serve hot with tomato sauces.

Sweets- Carrot Pudding

Ingredients

Carrot-250 grms (skin removed and grated)
Milk-1 litre
Sugar-1/2 cup
Vanilla essences-1/2 tspn
Condensed Milk-1/2 a tin
China grass- 10 grms
Nuts-Almonds-10 cut into small pieces, Cashew nuts-10 Cut into small pieces.
Water- 1/2 cup

Method

Boil milk and sugar, add carrot grated, make fire low, boil for 15 minutes, add vanilla essences and remove from the fire, add condensed milk. In other pan add chine grass and water make it melt and drain and pour in the milk. This milk pour in a pudding tray spread nuts on the top of the pudding and keep in the fridge for 2 hour, after it got set remove from the fridge and serve.

Sweets- Mysore pak

Ingredients

Gram flour- 1 cup
Ghee- 1 cup
Vanaspathi-(Vegetable Ghee) -make hot-1 cup
Sugar- 3 cup

Method

Take a bottom thick vessel put sugar and little water, when it boil add little vanaspathi and gram flour and stir nicely, add now and then vanaspathi and ghee in it, when the mix is not sticking to the vessel remove from the fire and spread in a plate immediately, cut into pieces and when it is dried remove from the plate and serve.

Snacks-Prawn Pakuvada

Ingredients

Mediun Prawn-250 grms
Ginger- 1 small pieces
Lime juice-1/4 tspn
Green chilly-3
Chilly powder-1/2 tspn
Turmeric powder-1/2 tspn
Water-1/4 cup
Small onion-2
Garlic-10
Pepper -10
Curry leaves-10 petals
Gram flour-8 tbspn
Oil- 2 cup
Salt- as required

Method

Clean the prawn, then add chilly powder, turmeric powder, green chilly, lime-juice, water, ginger and boil nicely till water is dried up, add grinded garlic, small onion, curry leaves and pepper in the boiled prawn and mix nicely and keep a side.
Make a thick battar of gram flour, little salt and water.
Pour oil in a pan, when it is heated, take the prawn mix dip in the battar and fry till light golden brown.

Cheese Balls

Ingredients

Butter-50 grms
Milk-1 cup
Maida-1 cup
Egg-2
Cheese-2 cubes
Pepper powder/chilly powder-as required
Oil -2 cup


Method

Boil milk and butter, add maida stir nicely and remove from the fire, add beaten egg, cheese grated, chilly powder and mix nicely and keep a side.
Pour oil in a pan when it is heated, make this battar in small round shape ball and fry till golden brown.

This is a tasty and healthy snack.

sweets- Jelabi

Ingredients

Urad dal-250 grms
Whitw rice -1 hand full
Sugar- 1 1/2 cup
Milk- 1 tspn
Kaseri powder-1 pinch
Vanaspathi-700 grms
Essences- (if required) 1/4 tspn

Method
Soak urad dal and white rice for 1 hour,after that wash and grind nicely and keep a side. In other pan put sugar and water, when it boil pour milk , take the bubbles on the top of syrup, and add keseri powder and remove from the fire. In other pan pour vanaspathi and keep in the fire. In a cloth put a buttom hole in the middle of the cloth and wet the cloth and pour the grinded battar in it and squeeze in to round shape in the heated vanaspathi ,when it is cooked remove from the oil and put in the syrup, when the sugar syrup is soaked nicely, slowly remove and keep in a plate to get dried.

Easy chicken pepper fry

Ingredients

Chicken-1Kg
Coconut-1 (cut into small pieces)
Turmeric powder-1 tspn
Pepper powder-2 tspn
Salt - as required

Method

Chicken cut into very small pieces. Marinate chicken with salt and turmeric and keep a side for 1 hour. In a pan, pour oil , fry coconut into light golden colour, then add chicken stir for few minutes, add pepper and mix nicely, close with a lid, keep the fire in sim, stir frequently, when the chicken is fried nicely, remove from the fire and serve hot.

Nan

Ingredients

Maida-1/4 kg
Egg-1
Yeast-1/4tspn
Sugar-1tspn
Butter-1tspn
Water-ae required

Method

Mix yeast, sugar, salt in water and keep aside, mix this yeast with maida and egg, make like chappathi dough and cover with a wet cloth for 3 hour. After 3hour this dough can be made into thin chappathi shape, when the pan is heated put this nan and cook both side, before remove from ths fire apply little butter on the top of the nan.

This can be taken with butter chicken, chilly chicken and with Mushroom masala etc.

Masala Bread(evening snack)

Ingredient

Bread-6 pieces (cut all the four side)
Onion-1
Green chilly-4
Salt- as required
Egg-3 (beated)
Cheese-1 cube
Milk-4 tbspn

Method
Grind onion and green chilly, mix with egg then add cheese, salt again mix nicely for 2 munites. Pour ghee in a pan when it is heated dip the bread in the batter and fry both the side and remove the fire and serve hot.

Mexican Tortilla

Ingredients



Wheat flour-2 cup

Salt- 3/4 tspn

Oil-4tspn

Light warm water-as required to make dough

Olive oil/Butter -6tspn

Garlic crashed-3 tspn

Chicken- (cut into small pieces) 11/2 cup

Cheese grated-6tspn

Maida-1 or 2 tspn

Milk - 2 cup

Basmathi rice -2 cup (boiled)

Green chilly-1 tspn (grinded)

Malli leaves-little

Salt- as required



Method



Wheat flour, salt, oil, light warm water mix nicely and this dough cover with a wet cloth for 1 hour.
From this dough make a thin chappathi, when the pan is heated put this chappati on it and cook both side, remove from the pan and cover with the a cloth, so that it will not become dry.
Boil rice and keep a side.
In other pan pour oil, when it is heated put garlic stir nicely till raw smell go, add chicken in it stir nicely, put the fire in sim then add grated cheese, springle maida, green chilly and salt stir for few minutes, add milk mix nicely for few minutes, remove from the fire, add rice and malli leaves and slowly mix.
This filling keep in each chapathi and roll it and seve hot.

This is a healthy food for children to give in lunch box.

Noddles With Spicy Gravy

Ingredients

Noddles- 2 cup
Garlic-4
Green chilly-2
Tomato-1
Capsicum-1/2 cup
Carrot- 1/4 cup
Spring onion-1/2 cup
Cabbage-1/2 cup
Corn flour-2 tspn
Chilly sauces-1 tspn
Soya sauces-1 tspn
Pepper powder-1/2 tspn
Vinegar-1/2 tspn
Salt -as required

Method

Boil noddles with salt and little oil then drain and keep a side, pour oil in a pan put garlic, tomato, vegetables (capsicum, spring onion, cabbage and carrot )and stir nicely for few minutes, mix corn flour in water and pour in this vegetables, add chilly sauces, soya sauces, pepper powder, vinegar, salt and noddles, mix nicely for few minutes. Remove from the fire and serve hot.

Tips.

We can add Chicken or Prawn or Egg.

Onion Vada

Ingredients

Onion -1 cup (cut into small piecec)
Green chilly-1/2 tspn
Gram flour-1 cup
Turmeric-1/2 tspn
Salt- as required
Oil- 1 cup

Method

Mix Onion, green chilly, gram flour, turmeric powder, salt in little water and make round shape and fry till light golden brown and serve hot.

Method

Marinate fish by salt and turmeric, and keep a side for 10 minutes. Pour oil in a pan when it is heated fry marinated fish into light golden brown. In other pan pour little oil put bay leaves, chilly powder, jeera powder,onion, coriander powder,ginger, tomato grinded and fry nicely till the raw smell go, add water,salt,fish and green chilly, boil for few minutes, when the grave is thick remove from the fire and serve hot.

Mushroom Korma with coconut

Ingredients

1. Coconut oil-3 tbspn
2.Mushroom-2 cup
3.Potato-2
4.Onion-2
5.Ginger-1 small pieces
6. Green chilly-2

8 Garam masala-1 tspn
9.Tomato-2
10. Water-2 cup

Method

In a pan pour oil and put Mushroom and Potato and fry nicely.
Grind (onion, ginger, garlic, green chilly, garam masala)
When the mushroom is fried add this masala, water, salt and boil nicely.
When the grave is thick add grind coconut, curd and mix nicely and boil.
Last add malli leaves,and curry leaves , remove from the fire.

This can be used for chappathi, Appam etc.

Prawn Masala Fry

Ingredients

1. Prawn-(meduim size) 200grms
2. Coconut _(cut pieces)1/2 cup
3. Chilly powder- 2tspn
Cloves-4
Cardammom-1
Garlic-6
Ginger-1 small pieces
Turmeric-1tspn
4.Salt- as required

To Fry
COconut oil- 3tbspn
Onion-2 (cut into small thin pieces)
Curry leaves- 20 petals

Method

Grind all the ingredients (cloves, cardammom, gralic, ginger, chilly powder). Marinate prawn with this masala, salt and coconut cut pieces and keep a side for 1/2 an hour. Boil this marinated prawn nicely. In other pan pour oil and fry onion to golden brown add curry leaves then mix the boiled prawn and stir nicely till the grave is mixed, remove from the fire and serve hot.

Simple Chicken Fry

Ingredients

Chicken-1/2kg (cut into small pieces)
Chilly powder-1 tbspn
Pepper powder-1/2 tspn
Tomato sauces-1 tbspn
Oil- 1/2 cup
Salt- as required


Method

Marinate chicken with all this ingredients ( chilly powder, salt, pepper powder,tomato sauces) and keep a side for half an hour. In a pan pour oil, when the oil is heated put the chicken, slighty stir and cover the pan with a lid then reduce the fire.Frequently open the lid and stir the chicken, when the chicken is golden crispy remove from the fire and serve hot. This is good for chappathi.

Milk Halwa

Ingredients



Milk-2 litre

Condensed Milk-1 tin

Cashew nut- 20grms (cut into small pieces)

Ghee-1/2 cup



Method



Keep a thick bottom vessel in fire, pour milk and stir nicely, when the milk is reduced to 1/2 litre pour condensed milk, stir nicely without removing your hand, when the mix becomes thick and not sticking in our fingers pour ghee and mix nicely. In other pan pour little ghee and fry cashew nut and put on the mix. In a plate spread little ghee and put this halwa and spread uniformely. When it is cool cut into pieces and serve.

Mackerel Coconut Milk Curry

Ingredient



Mackerel-1/2 kg

Coconut oil-1/2 cup

Onion-1 (cut into small pieces)

Curry leaves-10 petals

Green chilly-5

Ginger- 1 inch pieces (cut into small)

Turmeric-1/2 tspn

Red chilly-1/2 tspn

Coriandar powder-1 tspn

Raw mango-1/2 cup

Salt- as required

Coconut Milk-1st milk and 2nd milk



Method

Pour oil in a pan, fry onion, green chilly, ginger, curry leaves, add turmeric powder, coriandar powder, red chilly powder and again fry nicely then add mango, fish, salt and 2nd milk, when the fish is boiled nicely add 1st coconut in it and boil only for 1 minute. Fish curry is ready to serve.

Side dish for rice - Beet root fry

Ingredient



Beet root-1 cup (cut into small pieces then boil and keep aside)

Dried red chilly-3 (cut into 2 pieces)

small onion-1/4cup(cut into small pieces)

Ginger-2 inch pieces cut into small

salt - as required

pepper powder-as required

coconut oil- as required



Method

Pour oil in a pan, fry dried red chilly,small onion,ginger,then put beet root and salt mix nicely and cover with a lid for sometime,when the steamed come out add pepper powder and mix nicely and take out from the fire and serve as side dish for rice.

Bitter Gourd Curry

Ingredient



Bitter Gourd-1kg (cut into small pieces)

Coconut scraped-1

Tamarind-150gms

Chilly powder-3tspn

Coriandar powder-21/2 tspn

Small onion-4

Cumin seed-1/2 tspn

Mustard seed-1/2 tspn

Green chilly-5

Curry leaves-10 petals

Salt- as required

Coconut oil- as required



Method

Pour oil in pan, when oil is heated, put Bitter Gourd and fry,then add tamarind juice, salt. In other pan pour oil and when it is heated put coconut, chilly powder,coriandar powder,small onion,cumin see, fry till light brown colour, then grind in the mixie. Add this grinded mix in the bitter gourd plus green chilly. In other pan pour oil when it is heated put mustard seed, curry leaves,then add in the bitter gourd mix and make it boil nicely, then remove from the fire and serve.

snacks for children - Choco Dolls

Ingredients



1.Marie biscults-10(crashed)

2.Chocho powder-10 tbspn

3.Suger- 5 tbspn (powdered suger)

4. Milkmaid-1/2 cup

5.Butter-1 tbspn

6.Coconut-grated and steamed then make powder



Method

Mix all the ingredients from 1 to 5 and then make round small balls, after that cover this small balls with coconut powder.



This is a very rich and healthy snacks, all children will like it.

Chana masala

Ingredients



1.White Chana-1/2 kg soak for one hour

2.Vegetable oil-1/2 cup

3.Onion-3(cut into small pieces)

4.Ginger -(cut into small pieces)

5.Green Chilly -2

6.Tomato-1 (cut into small pieces)



Masala to add

1.Chana masala powder-1tspn

2.Chilly powder-1 1/2 tspn

3.Coriander powder-1/2 tspn

4.Turmeric powder-1/4 tspn

5. Chat masala-1/4 tspn



Method

Boil chana in pressure cooker by adding little salt.

Pour oil in a pan, when it is heated, put onion and fry till it light golden brown, then put green chilly, tomato and ginger. Fry till the raw smell goes, add chana masala, chilly powder, turmeric powder,coriander powder and mix it well then add boiled chana in this mix, when it is mixed well add chat masala on the top.

At last, to decorate, you can spread malli leaves,tomato and onion onthe top and serve. This dish is good for chapathi, Nan etc.

Egg Vegetable Roll

Ingredients



1.Egg-5

2.carrot-1 cup (cut into small pieces) beans-1\4 cup (cut into small pieces)

3.Onion-1/2 cup (cut into small pieces)

4.Capsicum- 1/4 cup (cut into small pieces)

5 Green chilly-4

6.Malli leaves- 2 tbspn (cut into small pieces)

7.Soya sauce-2 tspn

8.Potatoes-2 (steamed amd smashed)

9.Pepper- 2tspn

10.Maida- 2 cup

11.Rice powder-2tbspn

12.Jeerakam or (cumin seed)-1/4tspn crushed

13.Curry leaves-12 petals cut into small pieces

14 Salt- as required



Method



Egg mix with salt than scramble and keep aside.

pour oil in a pan and fry carrot, beans, onion and capsicum, when this is fried add scrambled egg, green chilly, malli leaves, soya sauce and pepper, mix nicely and remove from the fire, add smashed potatoes again mix and make a small round balls and keep aside.



Make a thick batter of maida and rice powder, add crushed jeerakam and curry leaves and salt.



Pour oil in a pan, when the oil is heated, dip the small ball in this batter and fry till light brown and serve with tomato sauce.

Delicious Recipe for all veggies - Mexican Rice

Ingredients

1. Basmati Rice - 1 1/2 cup
2. Water - 3 cups
3. Salt as required
4. Olive oil - 4 tbspn
5. Onion - 2 (cut into long pieces)
6. Garlic - 3 whole (grinded)
7. Turmeric powder - 1/4 tspn
8. Capsicum - Red/Yellow/Green - half pieces each sliced
9. Tomatoes - 1 (cut pcs)
10. Green peas - half cup
11. Carrot - half cup
12. Beans - 1/4 cup
13. Chilly powder - 1 tspn


Method

1. Wash the rice and soak for 45 mins, then drain and keep aside.
2. Steam carrot, green peas and beans and keep aside
3. Pour little oil in a pan and fry the drained rice, and when the color changes, add salt and
water and boil,
4. In another pan, pour oil and fry onion and when the onion becomes light golden brown, add
garlic and when garlic changes its color, add turmeric powder and remove from the oil.
5. Fry the capsicum in left over oil in the pan. When the capsicum is fried, add tomatoes,
steamed vegetables, chilly powder, salt and then mix nicely and at last add the rice with fried
onions and mix slowly and mixican rice is ready to be served.
